Muffuletta

Ingredients:
-3 tablespoons chopped green olives
- 3 tablespoons chopped black olives
- 1 grated carrot
- 20 fresh basil leaves or 2 branches of fresh thyme
- ½ cup olive oil
- 1 teaspoon minced onions
- 1 Italian bread
- 2oz bologna
- 2oz ham
- 2oz provolone
- 2oz mozzarella
- salt and black pepper
Preparation:
Grind the olives, the fresh oregano/thyme, carrot and onion. Mix them together and add salt, olive oil and black pepper. Slice the cold cuts.
Cut the bread in half. Spread the olive paste on both halves and top with slices of the cold cuts, then close the sandwich. May be served hot or cold.
